| I asked Uncle Si and Cousin Cliff what they missed most about our non-simplified Christmas. Both missed my buffet of quick breads. Well, they are all from boxes, so far. I did look for overripe bananas, but came up empty. I have some squash to cook. I even have canned pumpkin. So far, besides Auntie's fruitcake, I have made banana bread from a box, lemon poppyseed bread from boxes and here are |

| cranberry bread (made with orange juice instead of water, which is why it was yellow) and date bread, which Uncle Si likes. Cousin Cliff and I could cheerfully skip that one. :) |

| I tried spraying with olive oil this time, instead of greasing the pans with shortening. I'm going back to greasing. Then, when I loosen the bread from the sides of the pans with my handy dandy plastic knife left from some stop at Wendy's, and turn out the loaves, it will be less likely that I will find chunks of my bread in the bottom of my pans. :/ Oh, well, it still tasted good! :) Any baking going on in your kitchen? |
